<p>Rižoto u nekoj morskoj verziji pripremam gotovo svaki tjedan, razlika su samo morski plodovi koje uspijem nabaviti. Kako sam kuhao u Opuzenu imao sam sreće da smo imali očišćene svježe kapelunge (koje su karakteristične za pješčano ušće Neretve) i volak. </p>



<p>Najbitnije je napomenuti da se rižoto na jednak način može pripremati sa svim morskim plodovima, razlika je samo u trenutku dodavanja morskih plodova u rižoto. Kapelunge i volak idu odmah na kratko poprženi luk jer su malo žilaviji, pa se tek kasnije dodaje riža. Ako imate mekanije kozice i dagnje, one se dodaju nakon riže, samo nekih 5-6 minuta prije kraja kuhanja.  Od začina sam koristio samo motar, te Vegeta Natur za rižoto s plodovima mora s prirodnim sastojcima, morskom soli i bez pojačivača okusa  </p>

<p>30 dkg Arborio riže (sadrži više škroba koji se oslobađa pri kuhanju i daje rižotu savršeno kremastu teksturu) </p>

<p><strong>PRIPREMA: </strong></p>



<p>Na početku sitno nasjeckajte tri glavice luka, te kratko pržite na maslinovom ulju.                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                          </p>

<p>Dodajte kapelunge i volak, podlijte sa jednim decilitrom bijelog vina i miješajte dok vino ne ispari.</p>

<p>Dodajte rižu, te sve podlijte sa oko pola litre ribljeg temeljca. Pri kraju kuhanja dodajte motar i parmezan.</p>

<p>Nekoliko zanimljivosti o biljci motar (lat. <em>Crithmum maritimum</em>):</p>



<ol class="wp-block-list">
<li><strong>Prirodno stanište</strong><br>Motar je tipična biljka obalnih područja i raste na stjenovitim obalama i u blizini mora. Njegova sposobnost da preživi u slanom okruženju čini ga jedinstvenim među biljkama.</li>



<li><strong>Bogata povijest upotrebe</strong><br>Motar su koristili još stari Rimljani i Grci, prvenstveno kao začin, ali i kao lijek. Njegovo ime &#8220;Crithmum&#8221; dolazi od grčke riječi za ječam (<em>krithé</em>), zbog sličnog oblika sjemenki.</li>



<li><strong>Nutritivna vrijednost</strong><br>Ova biljka je bogata vitaminom C, mineralima i antioksidansima, što ju je u prošlosti činilo važnim dijelom prehrane mornara za prevenciju skorbuta.</li>



<li><strong>Kulinarstvo</strong><br>Mladi izdanci motara koriste se kao dodatak salatama, marinadama ili kao ukiseljeni prilog. Njegov okus podsjeća na kombinaciju peršina, celera i blagog limuna.</li>



<li><strong>Aromatična svojstva</strong><br>Motar ima izrazito aromatičan miris i okus, zbog čega je cijenjen kao začin u mediteranskoj kuhinji. Eterična ulja u listovima pridonose njegovoj intenzivnoj aromi.</li>



<li><strong>Ljekovita svojstva</strong><br>U narodnoj medicini, motar se koristi za poticanje probave, jačanje imunološkog sustava i detoksikaciju tijela. Smatra se i diuretikom te pomaže u izlučivanju viška tekućine.</li>



<li><strong>Ekološka uloga</strong><br>Motar pomaže u stabilizaciji tla na obalnim područjima te je važan dio ekosustava jer pruža stanište i hranu nekim morskim organizmima.</li>
